Taco Zoodle Bowl- with homemade ranch dressing

This zoodle bowl is a perfect low-carb lunch or dinner for the upcoming summer months. If you're a fan of tacos this is a perfect meal for you. However, I understand if you're turned off by the spiral coils of zucchini that look quite scary to eat if you're not a fan of zucchini in the first place. My challenge to you is to try these interesting zucchini noodles; you might change your mind...who knows?! But if you cannot bring yourself to eat them, substitute the zoodles with lettuce instead.
Just a little tip- you will need a spiralizer in order to make these zucchini noodles, or if you don't want to purchase one, you can buy them pre-cut in the produce section of the store. If you do decide to purchase a spiralizer, I will put the amazon link here of one similar to what I have. It not only cuts zoodles but can also spiralize other veggies like carrots and cucumber...or make curly fries!
I suggest using leftover taco meat from the night before to make this an easy, quick lunch that you can throw together in minutes. I used lean pork loin for my choice of meat, but you can use pulled chicken, ground turkey or beef, or even black beans for a vegetarian option. Make it easy for yourself and use what you have on hand in your fridge.
For toppings, again use what you have, but I suggest things like corn, tomatoes, avocado, onions, salsa and even a sprinkling of cheese would be delicious! For an extra crunch, add crushed tortilla chips.

How to Layer and Make This Taco Zoodle Bowl:
You're going to want to start by spiralizing the zucchini if doing it yourself. To make 4 bowls worth you'll need 1 small-medium zucchini. If you're buying zoodles or switching out the zucchini with lettuce have these on hand. There's really no measurements for this recipe, so you can use however much you want. Place your zoodles or lettuce in the bottom of the bowl. Start topping with the ingredients you chose and just layer with delicious, filling ingredients. And top the whole thing off with my homemade ranch dressing (below).
Ingredients for Ranch Dressing
1/4 cup avocado mayonnaise or light mayonnaise
2 Tbsp. Greek yogurt
2-3 Tbsp. coconut milk or regular milk (depending on how thin you like it)
1 Tbsp. fresh dill
1 tsp. fresh or dried parsley
1/2 tsp. garlic powder
1/2 tsp. ground pepper
1/8 tsp. salt
Instructions
Combine all ingredients in a bowl until well blended.
Makes enough to drizzle on the 4 bowls of zoodles. Note: It's also good on regular salads so go ahead and make extra to have on hand! Just store in a jar in the fridge.
