Tropical Quinoa Salad

This recipe for healthy Tropical Quinoa Salad will quickly become a staple in your kitchen. It’s perfect to enjoy on its own, bring to parties, or as a side! If there’s one type of food I could eat on the reg, it’s definitely quinoa and this salad makes for a perfect, easy meal prep dish for the week. It's so simple to make and you can use whatever veggies and ingredients you have on hand or enjoy! One of my favorite parts about this salad is the secret ingredient...pineapple! It adds a little tropical twist and hint of sweetness. If it sounds a little odd, please don't judge it until you try it, it's a game changer!





Ingredients


Salad

  • 2 cups cooked white quinoa (1 cup uncooked)

  • 1 heaping cup freshly chopped pineapple

  • 1 cup black beans

  • 3/4 cup cherry tomatoes

  • 3/4 cup cucumber

  • 1/2 small red onion

  • 1/2 cup green bell pepper (any color will do)

  • finely chopped cilantro or parsley

Dressing

  • Juice of 1 whole lime or lemon

  • 2-3 Tbsp. olive oil

  • 1 clove garlic

  • salt & pepper to taste


Instructions

  1. Cook the quinoa according to package directions. Once finished, set aside to cool completely.

  2. Begin by chopping all your vegetables and pineapple into small pieces.

  3. Once the quinoa is cooled and ready, mix all the ingredients together in a large bowl. If there is any ingredient you like more of feel free to add more!

  4. To make the dressing you can either mix the ingredients together in a bowl or just add it straight into the quinoa and veggies. If you find your salad is too dry, just add more oil and lime juice to taste.

  5. Store in an airtight container so it can be kept for meals throughout your week.


Notes:

Prepare your quinoa a few days in advance or use leftover quinoa and store it in the fridge to make this recipe even faster.


If there’s any ingredient in this salad you’re not particularly a fan of, you can simply leave them out, or even replace them with something else.


This quinoa salad can be stored in the fridge in a sealed container for up to 4 days. A perfect option for grab-and-go meals.
