Banana Oat Pancakes

These banana oatmeal pancakes are the best! Use ripe bananas to get a sweeter flavor. They're made with oats (which you can buy gluten free) and sweetened naturally with the bananas. Greek yogurt gives these healthy pancakes a wonderful texture and wholesome flavor. They’re super easy to make and can be done within 10 minutes for a healthy, filling, weekend breakfast for the family. Top the pancakes with fresh fruit, chocolate chips, syrup, or my favorite, PB Fit Peanut Butter powder, which is delicious drizzled on top and pairs well with the banana. I hope you enjoy!!

Ingredients
2 bananas
1/2 cup oats
1/2 cup oat flour
2 eggs
1/4 cup Greek yogurt
1 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. cinnamon
1 tsp. coconut oil melted in pan
Instructions
Mash up bananas with a fork in bowl. Add eggs, Greek yogurt, and vanilla to mashed bananas. Stir until combined.
Add the oats, oat flour, baking powder, and the cinnamon to the wet banana mixture. Mix all together. (Note: If your batter is too thick, add in 1 tbsp. of milk to thin it out.)
Heat pan or griddle on medium-high and add the coconut oil. Cook pancakes until they bubble on the sides, then flip. Serve immediately while hot.
Makes: 10 pancakes

This is the PB Fit powder that I use. It's not only a delicious topping for pancakes, but can be added to smoothies, shakes, or just eaten as plain peanut butter served with apples. It's a great source of protein and has 87% less fat and has about 1/3 less calories than regular peanut butter. All you do is just add water to the powder to the consistency that you choose. It has totally changed the game for peanut butter, and I love having this as an alternative to regular jar peanut butter.
